Week 1- Green Shakshuka

🥬 Start Your Day Light with Green Shakshuka! 🍳
We’re starting the series with a seasonal twist on a Middle Eastern classic: Green Shakshuka. This veggie-forward version is loaded with leafy greens, fresh herbs, and perfectly poached eggs — a light, satisfying dish you can enjoy any time of day.

Serves 3
🥣 Ingredients:
● 6 scallions, diced
● ½ cup fresh basil, chopped
● ½ head of cabbage, shaved or finely sliced
● 4 garlic cloves, pressed or chopped
● 2 tbsp olive oil
● 1 tsp cumin
● 3 cups baby spinach
● 6 large eggs
👨🍳 Preparation & Cooking:
Prep:
1. Dice scallions and chop basil.
2. Shred the cabbage and press or chop garlic.
Cook:
1. Heat olive oil in a large skillet over medium heat.
2. Add scallions and sauté until softened. Stir in garlic and cook for 2 minutes.
3. Add cabbage and cook until softened, then stir in cumin and baby spinach.
4. Sauté until spinach is wilted.
5. Make six small wells in the greens and crack an egg into each.
6. Cover and cook on medium-low until eggs are set to your preference. Add a splash of water if needed to prevent sticking.
